Choose a sheet large enough to line the tray or wrap the cut with useful overlap, but not so large that excess folds obscure the product. Paper color can support display contrast and presentation standards; it should not be treated as evidence of freshness or product condition. Basis weight and wet strength matter when the sheet will be lifted, folded or handled after exposure to meat juices.

Use fresh sheets according to the operation's sanitation procedures and replace paper that becomes saturated, torn or contaminated. Steak paper supports presentation and handling, but it does not replace temperature control, hygienic practices, leak-resistant secondary packaging or required labeling. Confirm that the exact paper is documented for the intended food type, temperature and duration of contact.
